Setting a max bitrate won't work with Plex and would cause buffering issues. This is because the Plex client requests the quality and bitrate from the Plex server (i.e. 1080p 20Mbps). If you set your max bandwidth in Sophos to only 10Mbps for example, then the the client is requesting a steam that requires more bandwidth than your connection would serve, causing pausing/buffering issues. Throttling a connection in Sophos wouldn't communicate with the Plex server to tell it to lower the bitrate of the stream to something lower than the bandwidth set in Sophos. Hopefully Plex will eventually release a feature that would allow you to set the max bitrate for each of your clients/friends so that one person doesn't suck up 100% of your connection, leaving nothing for others.
